Red & White Bean With Bacon Soup
A super easy and fast dinner that you can put together in half an hour and feed the whole family. Serve with some crusty bread if you have some hanging around!

  • 6oz Canadian BaconCut into thin strips
  • 1 Large OnionDiced
  • 2 Celery RibsMinced
  • 2Tablespoons olive oil
  • 1 1/2Quarts Chicken Broth
  • 2Can Cannellini BeansRinsed and drained
  • 1Can Red kidney beansRinsed and drained
  • 1Can Tomato Sauce
  • 2Tsp Italian Seasoning
  • 1/2Cup OrzoUncooked
  • 2Cloves garlicMinced fine
  1. Saute bacon, onion, celery and garlic in the oil until the onion is tender ~5 minutes.
  2. Add chicken broth, beans, tomato sauce and Italian seasoning.
  3. Heat to boiling and add orzo. Reduce heat to simmer and cook ~10 minutes.
Recipe Notes

If you don’t have any Canadian bacon laying around you can substitute in regular bacon, in which case you may want to use a touch more and saute it until almost done before adding the vegetables.
